Regardless of your answer to that, you will absolutely swoon over these homemade (gluten-free!) éclairs, with a choux pastry shell that you can also use to make cream puffs or perhaps some other savory treat. Far better than anything you will find in the supermarkets; these have a rich custard filling for a truly sumptuous mouthful.
